Banana Oats Cake

Ingredients

2 cups all-purpose flour

1 cup rolled oats

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1-1/3 cups mashed bananas (about 3 or 4)

3/4 cup buttermilk ( if you do not have buttermilk I make my own by putting 1TBSP white vinegar in 3/4 cup milk and let it sit for 15 minutes)

1/2 cup shortening

1-1/4 cups granulated sugar

2 eggs

1 teaspoon vanilla

3/4 cups chopped nuts (optional)

Directions

In bowl, combine flour, oats, baking powder, soda and salt. Stir well to blend. In separate bowl, combine bananas and buttermilk.


In large mixing bowl, cream together shortening and sugar. Add eggs and vanilla, beating at medium speed of electric mixer until light and fluffy. To creamed mixture make three additions of dry ingredients alternating banana-buttermilk mixture and combining lightly after each. Stir in nuts.


Spread batter evenly into greased and floured 13- by 9-inch cake pan, or into two loaf pans. Bake in 350°F oven for 30 to 40 minutes or until tester inserted in centre comes out clean. Let cool.
